2007 Bishop’s Peak Cabernet Sauvignon
This wine is no longer available.
This Paso Robles Cabernet Sauvignon shows complex aromas of cassis, plum, blackberry, cranberry, clove and sage. The mid-palate is medium bodied with flavors of spicy red fruit that finish with a balanced tannin structure and refreshing acidity. Enjoy it with grilled sirloin steak, Yukon gold fries, and a wild mushroom reduction sauce.
Wine Profile
Vineyard Notes
The 2007 growing season was unseasonably warm and challenging in Paso Robles. Yields were small and production was limited. The resulting wine has intense flavors and firm tannins and acidity. The sandy clay loam soils of the Hazel Talley Vineyard contribute to the depth and minerality of this cabernet sauvignon/cabernet franc blend.
Winemaker Notes
78% Cabernet Sauvignon and 22% Cabnernet Franc
