2010 Bishop’s Peak Cabernet Sauvignon
This wine is no longer available.
Deep ruby in color, this cabernet sauvignon shows complex aromas of strawberry, cranberry, cedar, anise, graham, and sage. The mid-palate is medium bodied and smooth with flavors of plum, raspberry, dried herbs and dusty oak that finish slightly toasty with elegant tannins. Enjoy this wine with grilled sirloin steak, and a wild mushroom reduction sauce.
Wine Profile
Vineyard Notes
The 2010 year began with above average rainfall, ending a three year drought in the Paso Robles region. July was one of the coolest on record leading to a late harvest and an exceptionally long growing season. Yields in Paso Robles were average and the grapes had lower sugar levels and perfectly developed flavors with lower alcohols in the finished wines.
Winemaker Notes
81% Cabernet Sauvignon, 8% Merlot, 7% Cabernet Franc, and 4% Malbec
